It’s a Thursday evening in Austin, the kind where the sun lingers and everything feels golden. I was just walking past a local vinyl shop when the smell of wood smoke stopped me in my tracks. The source? A black matte truck with flames painted along the bottom and the bold words DOUGH DADDY ATX across the top.
This wasn’t your average pizza spot. This was artisanal firepower on wheels.
At Dough Daddy ATX, everything revolves around the wood-fired oven in the back of the truck — hand-built, imported brick, and glowing with burning oak. I watched as one of the staff spun a disk of dough mid-air, dressed it in garlic olive oil, paper-thin prosciutto, and fig jam, then slid it into the flames. Ninety seconds later, it emerged blistered, bubbling, and beautiful.
I ordered the Texas Heatwave — their signature pie — and it hit every note. A chewy, smoky crust with charred bubbles gave way to spicy Calabrese salami, pickled jalapeños, hot honey, and creamy mozzarella. The balance was perfect: heat, sweetness, fat, and tang — a symphony for the palate.
But they didn’t stop at pizza. Their Charred Caesar Salad with crispy capers and wood-grilled romaine might’ve been the best salad I’ve had from a truck. And the surprise hit? The Nutella & Sea Salt Pizza Pocket — a dessert calzone folded over warm chocolate, hazelnuts, and flaky salt. It was molten joy wrapped in blistered dough.
I got a chance to chat with the owner, Jordan Miller, a former fine-dining chef who left his job during the pandemic to "get back to feeding people directly." He said, “Pizza’s personal. It’s social. I wanted to do something simple but give it soul.”
And you can feel that. The music is classic funk, the staff remember your name, and neighbors swing by just to hang around the truck. The whole vibe is Austin through and through — casual, creative, and community-driven.
